Exclusive cool climate estate grown South Australian Sparkling.

Pale straw in colour with a persistent fine bead. The aromas of citrus and nashi pear are wonderfully complex. Structured and delicate palate with a creamy texture. The wine displays fresh fruit flavours and a slight nuttiness building the delicate structure and balance of the wine. It finishes refreshing, clean and crisp.

The fruit was picked early in the season, pressed and then allowed to settled prior to racking and inoculation with selected yeast strains. The wine was left on lees for an extended period of time to build a yeasty character prior to bottling.
